payment processor gets a percentage of the order. they add tipping functionality by default because they read about the "nudge" concept with the other silicon valley bros and they think you're too stupid to figure that out.
The only way I'm "Tipping" a self checkout is if the company pays me for scanning and bagging the merchandise of a "Valued customer".

I haven't seen a checkout that Didn't ask for either a tip or a 'donation' for at least a few years now. Every single store wants my phone number, email, and extra money.
